A yummy Thanksgiving treat: Caramel Pecan Pie

Planning your Thanksgiving menu? Look no further for a flaky, delicious dessert that the entire family will love! Enjoy!

Caramel Pecan Pie
2011 Baked Fruit Filled and Single Crust Pies Single Crust Pie Blue Ribbon winner

Cheryl L. Adkins, Bloomingburg OH

Ingredients: (filling)

  • 36 caramels
  • 1/4 c water
  • 1/4 c butter, cubed
  • 3 eggs
  • 3/4 c sugar
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1 1/3 c chopped pecans, toasted
  • 1 unbaked deep-dish pastry shell (9 in)
  • Pecan halves, optional

Instructions: (filling)

  1. In a small heavy saucepan, combine the caramels, water and butter. Cook and stir over low heat until caramels are melted. Remove from the heat and set aside

  2. In a small mixing bowl, beat the eggs, sugar, vanilla and salt until smooth. Gradually add caramel mixture. Stir in the chopped pecans. Pour into pastry shell. If desired, arrange pecan halves over filling

  3. Bake at 350 degrees for 35-40 minutes or until set. Cool on wire rack. Refrigerate leftovers.

Ingredients: (crust)

  • 1 c sifted flour
  • 1/2 tsp. salt
  • 1/3 c plus 1 T shortening or 1/3 c lard
  • 2 to 2 1/2 T cold water

Instructions: (crust)

  1. Combine flour and salt in a mixing bowl. Cut in shortening with pastry blender until mixture is the consistency of coarse cornmeal or tiny peas

  2. Sprinkle on cold water, 1 T at a time, tossing mixture lightly and stirring with for. Add water time to the driest part of mixture. The dough should be just moist enough to hold together when pressed gently with a fork. It should not be sticky

  3. Shape dough in smooth ball with hands and roll

  4. Makes crust for 1 8 or 9” one-crust pie

Fairtastic food!

The Ohio State Fair has a lot to offer and every fairgoer should come hungry.

There are 189 food vendors across the grounds ... so it would be impossible for someone to say they didn't see anything that caught their eye. Special dietary options such as gluten-free and sugar-free are also available.

The Fair also has an even easier way to find the right snacks; just text "FoodFinder" to 82672 to access the Mobile Food Finder or download the free Mobile Food Finder app for Driod or iPhone operating systems.

So lets jump in
to some food, shall we?
Most people go to the Fair with at least one other person ... lets make it a food-day-for-two!

To start off: deep-fried vegetables. I got mine from Salty's Concessions. (A quick fact about Salty's: during the 2010 Fair, they sold over 133 gallons of deep-fried pickles.)

Why are they so delicious?
  1. Who doesn't love fried food?
  2. It's good to have some fun with foods that are normally plain.
  3. They taste GREAT! The batter was buttery and the vegetables being fried actually held in the great juiciness.
  4. Simple food. They weren't greasy so I didn't have to wipe my hands every time.
  5. Easy walking food!
  6. Plus, it came in a souvenir bucket!
Not every food is fried at the Fair. Did you know that Ohio Pork Producers Council created a new food this year?
The pork parfait. Or as I like to call it ... a meal in a cup!

Shredded pork, mashed potatoes and barbeque sauce layered in a cup and is topped with cheese and a cherry tomato.
Easily split between two people.
The shredded pork is incredibly tender and melted in my mouth.
The barbeque sauce had that perfect kick of hot and sweet and combined magically.
The potatoes mixed well with the meat and the the combo reminded me of a home-cooked meal.
And topped with cheese and a tomato - it really pus a smile on my face!
But what else could you split between at least two people? Cupcakes! But not any boring, regular frosted cupcakes. How about Kimmy's Cupcakes? They're decorated to look like various fair foods!
Kimmy's Cupcakes is a brand new establishment and is currently just a traveling vendor from Minnesota going to different fairs.

Their cupcakes represent fair favorites and the most iconic fun foods. I tried their hot dog, cheeseburger, popcorn and the waffle bowl sundae.

The cupcakes were SO fun! They were hard to eat because they just looked VERY cool.
The popcorn cupcake had a great red-velvet cake. The hot dog was the perfect balance between cake and icing. The cheeseburger was the most creative. The waffle bowl sundae had the perfect crunch to add with the cupcake.
The Fair has a lot to offer. From corndogs to cream puffs and deep-fried Kool-Aid to funnel cakes. There's something for you!

The Ohio State Fair is Underway!

It's day three at the Ohio State Fair and it looks like it will be another Fairtastic experience!

We are helping our neighbors with Feed Ohio Day, a "3-2-3" promotion where fairgoers can receive $3 admission if they bring 2 canned food items with them before 3 pm.

There are some "sweet" contests going on in the DiSalle Creative Arts Center including Smile and Say Cheesecake and Cupcakes Galore.

And as always, there is a great line-up of entertainment! Tonight in the WCOL Celeste Center you can see Tank, Chrisette Michele and Avant perform as part of the Sumemr of Love tour. Tickets are $20 and if purchased in advance include Fair admission.

There are also plenty of FREE entertainment options including today's performances by R&B / Funk group, B.D. Lenz All-Star Band and the acoustic pop / rock style of Carrie Westbay.

Cowman Spotted! Famous Ohio State Mascot Found At Columbus Hotspots

That's what North Market shoppers learned yesterday as we kicked off our "Cowman on the Mooooove" summer event.

For the next few weeks, Ohio's most beloved bovine will be moooooving all over to see some of the best sites in central Ohio.

Become Royalty at the 2011 Ohio State Fair!

Who hasn't dreamt of one day becoming a prince or princess?

Well, unless you're Kate Middleton, that dream probably hasn't come true just yet. But that doesn't mean you shouldn't have your very own throne anyway!

That's why the 2011 Ohio State Fair has extended the deadline for its "Decorated Thrones" contest to July 13!

Ok, so maybe a toilet wasn't exactly what you pictured when you were a little kid. But you can use your imagination, along with any decorations you want, to make your throne truly fit for royalty, or just your personality.

On July 28, Five Star Plumbing and Drains will provide the thrones / toilets for a maximum of 12 - 15 participants, who will have two hours to decorate their porcelain privies however they wish, from 2 pm - 4 pm.

The thrones will then be judged and displayed throughout the Fair at the DiSalle Creative Arts Center.

First, second and third place winners will be awarded. The winner will receive $100 ($50 of which will be a gift certificate to Home Depot) for their crowning achievement.
